I love veggies in sauce! Who doesnโt ??

Apart from the carrots, peas, green beans, and other veggies, scallions are super healthy and give your sauce a very exciting taste. Some people call it โspring onionsโ too. And some also add cabbage.
Recipe:
3 packs of scallions, red onions, white onions, tomatoes, bell peppers, green peppers, carrots, green peas, green beans, soya oil, rosemary, thyme, garlic, ginger, curry, seasoning. Beef and chicken. Plantain.
Cook chicken and beef till tender then chop into fun sizes, fry slightly in non stick pan with a little oil and set aside. Blend tomatoes with scallion(you can add cabbage too), green pepper, yellow pepper…chop the rest of the green pepper, carrots and green peas and beans and set aside.
Add a little more oil then fry plantain. Plantain oil is very good for frying tomato based sauce as the sweetness reduces the sour tomato taste.
Now, get your chopped veggies ready. Fry the onions, garlic, ginger, thyme, curry, rosemary, seasoning in the oil then quickly add the blended tomato puree to fry deeply…stir on medium to high heat but dnt burn. Allow to deep fry, it gets sweeter as it fries. Then add green peas, carrots, green pepper, fry a little more and add the broth/stock from the beef & chicken and a cup of water. Allow to boil down and absorb the water. Lastly add the meats. Taste and serve. Scallion sauce can be served with anything from bread, yam, corn, rice(plain/mixed with veggies and beans and sausages), pasta, dip for chips, goes with cheese based foods too.
